In Spectator Mode, though you're more like a ghost being able to clip into blocks and left clicking will let you see what an entity is seeing you can’t interact with blocks,entities or your own inventory. Some entites don't see full color, for example Creepers, as you'll see below the first image can only see in different shades of Green
